Spicy Tomato Basil Soup with Bacon | Paleo Primal Blog

If someone can figure out a delicious Paleo grilled cheese sandwich, then this may be the perfect rainy-day meal.

Ingredients

  • 2 cans peeled tomato
  • 2 cups vegetable stock
  • 1/4lb bacon (pre-cooked, chopped into cubes)
  • 1 Large sweet onion (chopped)
  • 2 cloves garlic (minced)
  • 1/4 cup basil (fresh, chopped)
  • 1 tablespoon thyme
  • pinch italian flat leaf parsley (finely chopped)
  • 1 teaspoon red pepper flakes (to taste)
  • 3 tablespoons olive oil
  • salt
  • pepper

Directions

Step 1 In a large pot over medium heat, add oil, onion, garlic and cooked bacon.
Step 2 When the onion becomes translucent, and the bacon has released some fat, add: tomatoes, stock, basil, thyme, parsley, and pepper flakes.
Step 3 After allowing the soup to reach a boil, reduce to a simmer, cover and allow to cook for 45-60 minutes.
Step 4 Ideally using an immersion blender, blend soup until the desired consistency is reached. If a normal blender is your only option, then carefully add soup to to it and blend in batches.
Step 5 Garnish with a chiffonade of fresh basil and parsley.
