Spicy Tomato Basil Soup with Bacon

Ingredients
- 2 cans peeled tomato
- 2 cups vegetable stock
- 1/4lb bacon (pre-cooked, chopped into cubes)
- 1 Large sweet onion (chopped)
- 2 cloves garlic (minced)
- 1/4 cup basil (fresh, chopped)
- 1 tablespoon thyme
- pinch italian flat leaf parsley (finely chopped)
- 1 teaspoon red pepper flakes (to taste)
- 3 tablespoons olive oil
- salt
- pepper
Directions
Step 1 | In a large pot over medium heat, add oil, onion, garlic and cooked bacon. |
Step 2 | When the onion becomes translucent, and the bacon has released some fat, add: tomatoes, stock, basil, thyme, parsley, and pepper flakes. |
Step 3 | After allowing the soup to reach a boil, reduce to a simmer, cover and allow to cook for 45-60 minutes. |
Step 4 | Ideally using an immersion blender, blend soup until the desired consistency is reached. If a normal blender is your only option, then carefully add soup to to it and blend in batches. |
Step 5 | Garnish with a chiffonade of fresh basil and parsley. |
