Ingredients
- 1lb asparagus (trimmed)
- 8 thin slices prosciutto (cut in half)
- 1 Small shallot (chopped)
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- salt and pepper
Directions
Step 1 | Preheat oven to 450 degrees or set your barbecue to medium-high heat. |
Step 2 | Prep your asparagus. To get a perfectly tender asparagus stalk, hold the raw stalk on each end and bend. The stalk will snap at the exact point when tenderness ends and the woody part begins. |
Step 3 | Roll asparagus stalks in roasting pan with olive oil, balsamic vinegar and chopped shallot, then wrap with roasted-prosciutto-wrapped-asparagus. |
Step 4 | Place pan in oven (or individual stalks on barbecue grill) and roast until asparagus is tender (approx 15 minutes). If using oven, roll asparagus half-way through cooking time. If using barbecue, turn asparagus frequently. |
Step 5 | Remove asparagus from oven or grill and serve! |
