Paleo Coconut Snack Bars

  • 3 tablespoons coconut oil
  • 1/4 cup cocoa powder (or carob powder)
  • 1/2 cup ground hazelnuts (or almonds, walnuts)
  • 3/4 cups shredded coconut (unsweetened)
  • 1 tablespoon honey


Step 1 In a saucepan over low heat, melt coconut oil and honey together.
Step 2 Once combined, remove from heat and add cocoa powder, nuts, shredded coconut and mix well.
Step 3 Using a baking sheet lined with either parchment paper or a silicone pad, pour mixture onto sheet and shape into squares or bars.
Step 4 Place pan in either the freezer or refrigerator and allow to harden.
