Step 1

Preheat oven to 350 degrees. |

In a sauté pan over medium heat, add apples, 1 1/2 teaspoon cinnamon and water. Cook the ingredients until the apples break down into an apple pie-like filling. |

While the apple mixture is cooling, whisk together in a separate bowl: eggs, butter, cocnut milk, coconut flour, the remaining cinnamon, baking soda and salt. |
Step 4

Add your apple mixture to the bowl and combine well. |
Step 5

In a muffin tin lined with parchment cups, fill each position about 3/4 full. |
Step 6

Bake your muffins for approximately 40 minutes, or until a toothpick inserted into the center of the muffin comes out clean. |
