This Paleo Chicken Salad is so good as a summer lunch! It’s super easy to prepare and really filling.

Paleo Chicken Salad

Serves 4

  • 1 Large chicken breast (diced)
  • 1 Medium celery stock (diced)
  • 1/4 cup almonds (sliced)
  • 1/4 cup dried cranberries
  • 1/2 cup Primal Primos Mayonaise (substitute Greek Yogurt)
  • Salt & Pepper (to taste)
  • 1 Large avocado
  • 1 head romaine lettuce


  • Sriracha hot sauce (to taste)


Step 1 Combine chicken, celery, almonds, dried cranberries and mayonaise in a bowl, mixing until well incorporated.
Step 2 Use each leaf from your lettuce head as a cup, placing sliced avocado in it and then topping with your chicken salad.
