Paleo Banana Nut Muffins

These paleo banana nut muffins come straight from the Primos Test Kitchen and turned out way better than I thought they would. They’re delicious as a quick breakfast or even as an evening desert. Add a drizzle of honey or melted butter to these hot treats for a more decadent touch.

Ingredients

  • 3 Large bananas (mashed)
  • 1/3 cup butter (clarified)
  • 2 tablespoons honey
  • 1/2 cup coconut flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon cinnamon
  • 1/3 cup walnuts (chopped)
  • 4 Large eggs
  • 1 tablespoon vanilla extract

Directions

Step 1 Preheat oven to 350 degrees
Step 2 In a large bowl, combine your wet ingredients and mix well: bananas, honey, butter, vanilla extract and eggs.
Step 3 In another bowl, combine your dry ingredients and mix well: coconut flour, salt, cinnamon, baking powder and baking soda.
Step 4 Slowly whisk dry ingredients into the wet ingredient bowl until well combined.
Step 5 Once complete, gently fold in walnuts.
Step 6 Pour mixture into greased muffin tins (or tins dressed with paper liners) and place in oven to bake for 20-25 minutes, or until a toothpick inserted into the center of muffin comes out clean.

    I absolutely love these muffins- I'm a big fan of baked goods, and these are a good substitute. I've been making a batch to keep on hand for breakfast. I did use almond flour, and coconut oil in place of the coconut flour, and butter (only because I had these already), and it worked. Thanks for the great recipes! Keep 'em coming.
