Ingredients
- 3 large granny smith apples (fine dice)
- 3 tablespoons water (warm)
- 2 teaspoons cinnamon
- 8 large eggs
- 2 tablespoons clarified butter
- 3 tablespoons coconut milk
- 1 1/2 tablespoon coconut flour
- 1/2 teaspoon baking soda
Directions
| Step 1 | Preheat oven to 350 degrees. |
| Step 2 | In a sauté pan over medium heat, add apples, 1 1/2 teaspoon cinnamon and water. Cook the ingredients until the apples break down into an apple pie-like filling. |
| Step 3 | While the apple mixture is cooling, whisk together in a separate bowl: eggs, butter, cocnut milk, coconut flour, the remaining cinnamon, baking soda and salt. |
| Step 4 | Add your apple mixture to the bowl and combine well. |
| Step 5 | In a muffin tin lined with parchment cups, fill each position about 3/4 full. |
| Step 6 | Bake your muffins for approximately 40 minutes, or until a toothpick inserted into the center of the muffin comes out clean. |
