Ingredients

  • 3 large granny smith apples (fine dice)
  • 3 tablespoons water (warm)
  • 2 teaspoons cinnamon
  • 8 large eggs
  • 2 tablespoons clarified butter
  • 3 tablespoons coconut milk
  • 1 1/2 tablespoon coconut flour
  • 1/2 teaspoon baking soda

Directions

Step 1 Preheat oven to 350 degrees.
Step 2 In a sauté pan over medium heat, add apples, 1 1/2 teaspoon cinnamon and water. Cook the ingredients until the apples break down into an apple pie-like filling.
Step 3 While the apple mixture is cooling, whisk together in a separate bowl: eggs, butter, cocnut milk, coconut flour, the remaining cinnamon, baking soda and salt.
Step 4 Add your apple mixture to the bowl and combine well.
Step 5 In a muffin tin lined with parchment cups, fill each position about 3/4 full.
Step 6 Bake your muffins for approximately 40 minutes, or until a toothpick inserted into the center of the muffin comes out clean.
