Paleo Oatless Oatmeal
I had to work a 48-hour shift this past weekend and Karla hit TJ’s on Friday to stock up the fridge and make sure that I had plenty of options while I was at work. Inspired by Louie’s complaint that eggs and breakfast meat day after day gets old for breakfast, and knowing that I don’t care for leftovers for my first meal, she set out to convert more traditional breakfast fare into a paleo meal for me to enjoy over the weekend.
So, “oatless” oatmeal, you ask? At first, the wife didn’t want to tell me what she was cooking up, as the main ingredient in this dish is not one you would typically eat for breakfast, but seeing as how she needed to tend the baby, I got stuck ricing the cauliflower! Yes, that’s right, cauliflower, one of our paleo staples. She combined several different recipes she found online and put her cooking skills to work to make this recipe her own. I must say we were both surprised by how delicious this turned out!

Ingredients
- 2 cups Cauliflower (Riced)
- 1 Banana (Mashed)
- 2/3 cups Coconut Milk
- 4 tablespoons Flax Seed Meal
- 1 1/3 cup Water
- 2 Eggs
- 2 tablespoons Agave Syrup
- 2 teaspoons Cinnamon
- 1/2 teaspoon Nutmeg
- 1/4 teaspoon Allspice
Directions
Step 1 | Bring the cauliflower, mashed banana, coconut milk, water and spices to a boil and simmer for 10 minutes, until the cauliflower is tender. |
Step 2 | In a separate dish, whisk a small amount of the hot mixture into the eggs (this step ensures that you don't end up with scrambled eggs the minute it hits the hot pan). Whisking the cauliflower continuously, slowly add the eggs to the saucepan. |
Step 3 | Remove from heat, add flax seed meal and agave syrup and serve! |
Note
Top with fresh or frozen fruit, nuts, agave syrup, or honey
Use apple sauce or pureed pumpkin instead of mashed banana
